Kadi

Ingredients:

Gram flour 7 tbsp
Sour thick curds 3/4 cup
Water 4 cups
Onion 1
Green chillies 2
Ginger 1 cm
Garlic 1 flake
Salt 1-1 1/2 tsp
Kasooti methi 1tsp
Chilli powder 1/2tsp
Turmeric powder 1/4 tsp

Directions:

  • Chop all onion and green chillies fine.
  • Mix four tbsp of gram flour, half the onion, half the green chillies, ginger, 1/4 tsp salt and kasoori methi with a little water.
  • Shape like pakodas, deep fry in a little oil-till golden brown in color. Remove from oil and keep aside
  • Beat the sour curds and the three tbsp of gram flour together into a smooth batter. Add water , one and a quarter tsp salt, chilli powder and turmeric powder to it. Stir over low heat till the kadi gets cooked and becomes thick.
  • Put pakodas in the boiling kadi. Simmer for a couple of minutes and remove from the heat.
  • Heat two tbsp oil in a pan, add half tsp jeera and quarter tsp hing powder to it. When jeera splutters add the remaining chopped onion , green chilli , ginger and also finely chopped garlic.
  • Fry till onion becomes golden in color. Tilt the contents of the pan into the kadi. Serve kadi hot with any roti of your choice

    (kasoori methi is dry fenugreek leaves, availble in packets in grocery shops and have a unique flavour)
