KHAGEENA PULAO

Ingredients

Eggs 6 no
Basmati rice 300 gm
Oil 100 ml
Ghee 1 tbsp
Garam masala powder 1 tsp
Turmeric powder 1 tsp
Green chilly paste 1 tsp
Ginger garlic paste 1 tsp
Green tomato paste ½ cup
Onions chopped 4 tbsp
Salt to taste

For topping:
Onions, Sliced and fried Coriander and slit green chilies White of boiled eggs

Method:
  • Fry chopped onions.
  • Add ginger garlic paste, turmeric powder, chilly paste and green tomato paste.
  • Break the eggs into the masala and cook.
  • Boil the rice till done.
  • Spread half in a thick bottomed vessel.
  • Pour the egg masala over this and cover with the remaining rice.
  • Top it with fried onion slices, slit chilies and garam masala powder.
  • Seal the cover and simmer for 5 min.
  • Garnish with slices of boiled egg whites. Serve hot with green chilies and chopped coriander.
