Ingredients:

Brinjal 1 lb
Onion big chopped 1
Ginger garlic paste 1 tsp
Coriander powder 1 tsp
Peanuts 1/4 cup
Sesame Seeds 1/4 cup
Cloves 3
Cinnamon 1 inch
Coconut powder(dry) 1/4 cup
Chili powder < 1 tsp
Salt to taste
Tamarind pulp 2 tbsp
Turmeric 1/2 tsp
Bay leaves few
Coriander leaves few
Oil 4-5 tbsp


Direction:

  • Slit brinjal into 2 halfs without cutting completely and put them in salt water
  • Fry peanuts, sesame seeds, cloves, cinnamon, onion separately without oil.
  • To these add ginger garlic paste, coconut powder, coriander powder,turmeric, chili powder , salt and coriander leaves and grind .
  • Make a smooth paste adding very little water
  • Now stuff this paste into brinjals and keep the remaining masala aside
  • Head a kadai , add oil and the remaining masala and bay leaves.
  • Fry the masala.
  • When the oil comes out add the brinjals and the tamarind paste.
  • Add 1/2 - 1 cup of water. Mix them slightly and cover them.
  • Stir them frequently so that masala do not stick to the bottom of the pan.
  • Add little water if masala becomes too thick.
  • Cook till brinjals are cooked completely.
  • Serve hot with plain Rice or roti
