Ingredients:
Aloo( cut into small chunks) 2 big Small brinjal 6 - 8 Tomatoes(small) 3 Onion(big) 1 Turmeric 1/4 tsp Dry shredded coconut 1-2 tbsp Ginger-garlic paste 1 1/2 tsp Green chillies (slit into halves) 4 Chilli powder 3/4 -1 tsp Salt to taste
For Seasoning:
Mustard seeds Jeera Chana dal Curry leaves

Directions: Cut onions and tomatoes into small pieces In a kadai put some oil and add mustard seeds. When they start spluttering add jeera, chana dal and curry leaves . Add ginger garlic paste and then onions and green chillies. When onions are slightly brown, add tomatoes, turmeric and then aloo. Fry a little. Add brinjal and chilli powder and fry. Add some water and put the lid on. Add some salt and when almost done add coconut. Serve with Chapathis
